Founded in 1951, this Japanese restaurant helped pioneer tonkotsu pork bone shoyu ramen in the Joetsu Myoko region, and even after generations, there is still a line out the door nearly every day. This Japan food documentary follows Sayaka san, the third generation granddaughter of the founder. Her mother carried on the business after her grandfather, and now she is continuing the family’s legacy while preserving one of Niigata’s most loved bowls of Japanese ramen. The shop simmers pork bones and back fat for at least sixteen hours, carefully drawing out deep umami while skimming impurities to create a broth that is rich yet surprisingly light. Their noodles are also made in house at the family noodle factory, where Sayaka san began helping when she was only fifteen years old. At a time when tonkotsu ramen was uncommon in the area, her grandfather slowly built a loyal following through dedication and experimentation. This is a day in the life in Japan, following a Japanese worker in Chigasaki as he helps keep the city clean as a Japanese Garbage Collector. I traveled from Tokyo to Hokkaido to visit Es Con Field, home of the Nippon Ham Fighters, and easily one of the most advanced baseball stadiums in Japan. If you are into Japan travel, Tokyo travel, or planning a Japan guide, this is one of the most unique things to do in Japan. This stadium is more than just baseball. It has a built in onsen, sauna, hotel rooms overlooking the field, seats for dogs, a batting simulator, over 50 restaurants, and even a massive playground. It feels less like a stadium and more like a full entertainment theme park built around Japanese baseball culture. After a two hour flight from Tokyo and another hour by train, I finally made it. The goal was simple. Do as much as possible before the game ended, get a piece of the field, and somehow make it onto the massive Jumbotron. As part of a family business founded in 1941, Shota represents true Japanese work culture, balancing tradition, leadership, and life in Japan’s countryside.In Japan, oysters are grown hanging from ropes instead of resting on the seabed. This oyster farming method helps maintain a tender texture and clean flavor. In the mineral rich waters of Noto, where warm and cold currents meet, Japan oysters develop deep umami and a flavor distinct from European or American varieties.On an average day, the team harvests around 3,000 oysters. This is wagyu ramen is fire and better yet it is under $10. The man behind it is Tetsuya, and he may look familiar. He was actually featured in my Day in the Life of a Japanese Ramen Chef video that I filmed six years ago. When I first ate here, I didn’t even realize he was the owner. After digging a little deeper, I found out this was his shop, which the experience even better. His ramen is made using 100% wagyu beef. Perfecting the recipe took years, mainly because balancing the natural umami from wagyu fat was extremely difficult. Too much made the broth heavy, while too little left it flat. Through constant trial and patience, he eventually found the balance he was aiming for. The rich wagyu paitan broth is blended with garlic and ginger, paired with a soy based tare infused with kelp and shiitake. It is finished with a signature oil and served with custom medium thin dry noodles designed to stay firm and enjoyable until the last bite. Every year, our family travels to Aichi to spend New Year’s with Maiko’s parents and celebrate Oshōgatsu. Like Christmas in the West, it’s customary in Japan to return to your hometown and be with family on December 31, known as Oomisoka. This year, we headed out a day early on the 30th, easing into the quiet rhythm of being back. Wolfy is always excited to visit jiji and baba, but when he first sees them, he’s still a little shy. This time, though, I noticed how much more comfortable he felt in the house and how much easier it was for him to express himself. Every year it hits me how fast he’s growing, and moments like this make me want to slow everything down. There’s nothing to rush, nowhere to be, just time to breathe and enjoy being together. Teishoku is everyday Japanese home style cooking, built around balance and simplicity. A typical set includes a main dish like grilled fish, chicken, or pork, served with rice, miso soup, and pickles. Because of its variety and affordability, this shop has become a go to lunch spot for locals, often forming a line before the doors even open. Each morning begins with preparing the handwritten menu board. Since the dishes change daily, it lets passersby know exactly what will be served that day. Behind the menu is Natsumi san, who previously worked as a menu developer for cafés in Omotesando, Akasaka, and Kichijoji. Now she brings that experience into her own kitchen, creating dishes freely with the freshest ingredients. This flexibility is why the menu changes every day and why regulars return multiple times a week. Her mother grew up in Tokyo and, after raising two daughters, made a quiet promise to cook homemade meals every day. Disneyland is often called the happiest place on earth, and it definitely makes my family happy no matter how many times we visit. But does it actually make me happier? We managed to secure a rare reservation at the Tokyo DisneySea Fantasy Springs Hotel, a stay that costs around ¥100,000 or $650 per night and is almost impossible to book. My wife says it is supposed to be magical, so I wanted to see if it really lives up to the hype. To find out, I decided to compare it with a much cheaper option just 20 minutes away called Hotel Springs. The names are almost identical, but the prices are not. One costs ten times more than the other. My goal is simple. I rate both hotels based on how happy they make me feel, including the lobby, room, amenities, views, and overall experience. The Fantasy Springs Hotel is built directly inside Tokyo DisneySea, connected to the park and located in the newest Fantasy Springs area. Being able to enter the park easily and start the day close to the rides definitely adds to the experience. The question is whether that convenience and atmosphere are really worth the price compared to a basic, affordable hotel nearby.
